If you’ve ever found yourself with a surplus of egg whites after a baking session or a recipe that only required yolks, you’re not alone. Don’t let those leftover egg whites go to waste! They are incredibly versatile and can be transformed into a variety of delightful treats.
During the holiday baking season, I always find myself with a bunch of leftover egg whites. I hate wasting them so I have been trying out new ways to use egg whites.
But I wanted some more options! So I have put together a list of over 30 ways to use egg whites any time of year!
How to Store Leftover Egg Whites
There are two ways you can store your egg whites: in the refrigerator or by freezing them.
To store in the refrigerator, place your eggs in an air-tight container. Egg whites will last int he refrigerator for up to 4 days.
If you won’t be using your egg whites right away, freeze them! Egg whites freeze easily. Again, store in an air-tight container or freeze individually in an ice cube tray!
Egg whites can be frozen up to one year. To defrost, place whites in an airtight container in the refrigerator overnight, and they’re ready to use.

Fluffy Meringues: Meringues are a delightful treat made primarily from egg whites and sugar. These light and airy confections can be enjoyed on their own or used as a versatile component in other desserts.
To make meringues, simply beat the egg whites until they form stiff peaks, gradually add sugar, and continue beating until the mixture becomes glossy. You can then pipe or spoon the meringue onto a baking sheet and bake until they are crisp on the outside and soft on the inside. Add flavors like vanilla, lemon, or even chocolate for an extra touch of deliciousness.
Elegant Angel Food Cake: Angel food cake is a heavenly dessert that relies solely on egg whites for its structure and airy texture. By whisking the egg whites to perfection, you can create a light and fluffy cake that is both delicate and delicious.
The key to a successful angel food cake is gently folding in the dry ingredients, such as flour and sugar, to maintain the airiness of the beaten egg whites. Serve this ethereal treat with fresh berries and a dollop of whipped cream for a delightful combination.
Delicate Macarons: Macarons are a classic French delicacy that can seem intimidating to make, but they are worth the effort. These colorful sandwich cookies consist of two almond meringue shells filled with a creamy ganache or buttercream.
Making macarons requires a bit of precision, but with practice, you can achieve perfect results. Whip the egg whites to stiff peaks, fold in almond flour and powdered sugar, and pipe the batter into small rounds. After baking, fill them with your favorite flavored filling, such as chocolate, raspberry, or salted caramel. These dainty treats are sure to impress any dessert lover.
Refreshing Pavlova: Pavlova is a show-stopping dessert that combines a crisp and delicate meringue shell with a luscious cream filling and fresh fruits. This dessert allows you to get creative with your egg whites and offers a delightful balance of textures and flavors.
To make a pavlova, whip the egg whites until they form stiff peaks, gradually add sugar and a touch of vinegar or cornstarch for stability. Shape the mixture into a round or individual nests on a baking sheet and bake until they are crisp on the outside and marshmallow-like inside. Once cooled, fill the center with whipped cream and top it with an assortment of fresh fruits, such as berries, kiwi, and passion fruit.
